In April 2011, Darren & Tricia Butcher became the proud owners of the Nimbin Bakery and re-opened the business at the current site. Darren and Trica both grew up in Nimbin, attending Nimbin Central School.
Darren is the son of Lyle and Fay Butcher, both of whom grew up and worked on farms in and around Nimbin all their lives.
Tricia is the daughter of Bill & Nancy Nugent, who were the operators of the Nimbin Bakery from 1974 to 1985. Back then, the baking was done in a wood fired oven in a seperate premises at the back of the main street. The retail shop was right next door to the current premises in Cullen Street. Bill famously made and sold the famous Aquarius Bread for many years, selling it widely throughout QLD and NSW. This recipe has been passed onto Darren and Tricia who make bread and bread rolls Aquarius Bread.
